Teriyaki Quinoa Stir Fry
this was such an easy recipe and i bought all of the ingredients in bulk making this the perfect go-to recipe for an easy weeknight dinner. OR i might make a lot of it and have leftovers to pop in the microwave for an even easier lunch or dinner
and quinoa is a complete protein!
 
- 1 cup (dry) of organic quinoa- 1 package (227 g, 8 oz.) fresh button mushrooms, sliced- 3 carrots, chopped- 2 cups of broccoli florets- 2 scallions, chopped- 3 asparagus stalks - 1/2 medium onion, finely chopped- 1 garlic clove, finely chopped- 2 Tbsp terriyaki marinade- 1/4 tsp cayenne pepper- salt- black pepper - extra virgin olive oil (or pam or canola oil)Method1. Cook quinoa according to directions on package making sure to rinse quinoa before cooking. 
2. In a pan, Sautee the garlic and onions with some extra virgin olive oil (i just use a generous amount of pam) until the onions are translucent. Add in the carrots and scallions and stir fry for 10 minutes.3. Turn the heat down to medium, add in the cooked quinoa, mushrooms, broccoli, and asparagus, and stir fry for an additional 30 minutes. While stir frying, add in the cayenne pepper and terriyaki marinade. Add salt and black pepper to taste.

Second day of Insanity!

Started doing insanity workouts (not the full program, just some of the ones online) and boy, they are difficult! In a few days, it will be one month until lacrosse preseason starts so my goal for this month is to do Insanity every day. Even if I only have the energy to do ten minutes; even if I have to take a break every minute, I will do it. 

I found I’ve been so focused on exercise that I haven’t been doing well with eating healthy. That’s my second goal for the month, just to stop and think a little more before I eat, and really make better choices. I tend to lose motivation to eat healthy when I’m so active, but I need to remember to fuel my body well and not overload on pre-game carbs (my biggest weakness— I convince myself it’s for “energy”). 


I’m Back!

So sorry everyone, it’s been just about the craziest month ever! 

I completed my 21 day challenge, but unfortunately saw no change on the scale whatsoever :( I’m yet to take progress pics though, so hopefully I’ll see some change through that. 

For the next few weeks, I definitely promise to post more! My hockey season(s) are finishing up, so my schedule is clearing up a bit. 


21 day challenge update

So with all of this working out, I’ve sincerely been way to busy to check tumblr at all :( Everything’s been going great so far, though I don’t see much difference on the scale yet. My fitness is getting better and I’m definitely getting stronger. I’ll try to post more tomorrow if I have time, but life is getting really busy with 2 a day workouts + hockey + lacrosse, plus talking with my potential college lacrosse coach about a spot on the team / scholarship money. That’s actually my biggest motivation right now, how in six months I will probably be having to prove that I am a good enough athlete to play a Division 1 sport.
